MARINATED MUSHROOMS

YOU WILL NEED

  • 250g ( 80z ) button mushrooms 
  • 3 tablespoons lemon juice 
  • ½  cup oil 
  • 2 tablespoons chopped parsley 
  • 1/4 teaspoons salt 
  • ½ teaspoon tarragon pepper

MARINATED MUSHROOMS RECIPE:

Wash mushrooms, remove stalks, slice thinly. Combine lemon juice, oil, salt, pepper, tarragon, and chopped parsley in a bowl. Mix well. Add mushrooms; mix well. Cover. Marinate mixture for 4 hours or overnight.

Marinated mushrooms are also delicious and tossed into a green salad. Remove mushrooms from the marinade with a slotted spoon, add to salad greens; add enough of the marinade to coat salad greens lightly, toss well.
