 BEANS WITH TOMATO

YOU WILL NEED:

  • 1kg ( 2lb ) Continental beans
  • 30g ( 10z ) butter
  • 1 clove garlic
  • 2 onions
  • 45g can anchovy fillets
  • 3 tomatoes
  • 1½ tablespoons tomato paste
  • 1 teaspoon basil
  • ½ teaspoon sugar
  • 1 cup water salt, pepper

Note: When Continental beans are out of season, two 300g cans of borlotti or can selling beans can be substituted Drain, rinse, and add them for the last 10 minutes of cooking.

Finely crush the garlic. Peel and finely chop onions. Drain and finely chop anchovy fillets. Peel and chop the tomatoes.

Melt butter in a saucepan, add garlic, anchovies, onion, and tomato; cook until onion is transparent. Add tomato paste, basil, sugar, and beans, and mix until well combined. Add water, bring to a boil, reduce heat, and simmer covered for 30 minutes or until beans are tender. Season with salt and pepper.
