APPLE AND ALMOND CUSTARD FLAN
INGREDIENTS
- 2 cups milk
- 1/4 cup custard powder
- 2 tablespoons castor sugar
- 1/2 cup milk, extra
- 410g can pie apples
- 1/3 cups sultanas
- 2 tablespoons brown sugar
- 2 tablespoons ground almonds
- 2 teaspoons plain flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- pinch ground cloves
- 1 quantity of plain pasta dough
- 2 tablespoons slivered almonds
- icing sugar
APPLE AND ALMOND CUSTARD FLAN METHOD:
Line the base and side of 20cm springform tin with foil; grease foil. Bring milk to boil in a pan, stir in blended custard powder, castor sugar, and extra milk, and stir until custard boils and thickens; cool.
Combine apples, sultanas, brown sugar, ground almonds, flour, and spices in a bowl. Roll pasta until 2mm thick, cut into 3 rounds the same size as the prepared tin. Spread a little apple mixture over the base of the tin, spread with 1/4 cup custard; top with a round of pasta.
Spread half the remaining apple mixture over the pasta, then one-third of the remaining custard mixture. Repeat layering, finishing with a custard layer. Sprinkle custard with slivered almonds.
Bake flan in a moderate oven for about 30 minutes or until set; cool. Serve flan hot or cold, sprinkled with sifted icing sugar.
Serves 6 to 8.
Note: The recipe can be made a day ahead.
