MUTTON AND PASTA WITH MUSTARD CREAM SAUCE

INGREDIENTS

  • 1/4 cup olive oil
  • 1 onion, sliced
  • 750g mutton,
  • plain flour
  • 1/2 cup buttermilk
  • 3/4 cup cream
  • 1/2 cup dry white wine
  • 2 tablespoons French mustard
  • 500g paglia e fieno pasta

MUTTON AND PASTA WITH MUSTARD CREAM SAUCE METHOD:

Heat 1 tablespoon of the oil in a pan, add onion, cook, stirring, until soft; remove from pan. Remove meat from the shank, and cut meat into strips. Toss the meat in flour, and shake away excess flour. 

Heat remaining oil in a pan, add meat, and cook, stirring, until well browned and tender; remove from pan, and combine with onion in a bowl. Boil any juices remaining in the pan on high heat for about 1 minute or until reduced to about 1 tablespoon. 

Add buttermilk to the pan, and stir over heat until the mixture thickens slightly. Stir in cream, wine, and mustard, stir until mixture boils, and simmer, uncovered, until slightly thickened. 

Add pasta to a large pan of boiling water, boil, uncovered, until just tender, and drain; keep warm. Add mutton and onion to the mustard sauce, stir until heated through, and serve over pasta.

Serves - 4.

Note: Recipe best made close to serving.

Freeze: Not suitable.

Microwave: Pasta suitable.
