COOL ' N ' SPICY BEEF WITH PASTA
INGREDIENTS
- 200g pipe rigate pasta
- 1 tablespoon olive oil
- 500g minced beef
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon garam masala
- 1 large red pepper
- 150g snow peas, chopped
- 5 green shallots, chopped
- 2 teaspoons chopped fresh coriander
- 3/4 cup dates, sliced
DRESSING
- 2 tablespoons light soy sauce
- 1/4 cup dry sherry
- 1 tablespoon mirin
- 2 teaspoons sugar
- 2 teaspoons sesame oil
- 2 teaspoons grated fresh ginger
COOL ' N ' SPICY BEEF WITH PASTA METHOD:
Add pasta to a large pan of boiling water, boil, uncovered, until just tender; drain. Heat oil in the pan, add mince and ground spices, and cook, stirring, until well browned and tender; cool. Quarter pepper, remove seeds, and membrane.
Grill pepper, skin side up, until skin blisters and blackens. Remove skin, chop pepper
Combine mince mixture, pepper,
snow peas, shallots, and pasta in a bowl; cover, refrigerate.
Just before serving, stir in fresh coriander, dates, and dressing; mix well.
Dressing:
Combine all ingredients in a jar and shake well.
Serves 6.
Note: Salad can be
made a day ahead. Dressing can be made 3 days ahead
Storage:
Covered, in the refrigerator.
Freeze: Not
suitable.
