DOG & BONE CAKE
METHOD:
Color 470g ( 150z ) of sugarpaste black Roll out 440g ( 14oz ) and cover the cake board, trimming any excess from around the edge. Thinly roll out 60g ( 2oz ) of white sugarpaste and cut thin strips for the cake board, securing in place with sugar glue Colour 75g ( 2 ½ oz ) of sugarpaste red. Thinly roll out and cut slightly wider strips than before to complete the checked pattern, then put aside to dry
Position the Swiss roll
diagonally on the cake board with two fairy cakes at the end, to form the dog's bone. Fill in the gaps
between the cakes with buttercream to help the sugarpaste stick.
Roll out 625g ( 1 ½ lb ) of white sugar paste, using icing sugar
to prevent the sugarpaste from sticking to the work surface, and cover the cakes
completely smoothing around the shape of the bone. Trim carefully around the
base, tucking the sugarpaste underneath.
To make the dog,
first model a thick sausage using 140g(4
½ oz) of white sugar paste. Following
the stages in the photograph below, first make a cut at one end to separate
the front legs, then smooth away the ridges and round off each front paw.
Pinch the body all the way round to create a dip in the middle Model one black
and one white back leg using 30g ( loz ) of sugarpaste for each Press the top
of each leg flat, then stick in position using sugar glue. Press in with the
side of a cocktail stick to mark the lines on each paw.
Using 15g(1/2 oz)of
red sugarpaste model a flattened stick onto the dog for his collar. Then roll a
90g ( 3oz ) ball of white for the dog's head and pinch slightly to narrow the
top Model two flattened teardrop shapes for the dog's muzzle and two tiny
flattened ovals for eyes, Mark holes in the muzzle using the tip of a cocktail
stick.
Press on a black eye
patch. spreading it out until completely flat, then stick on the two white eyes and black pupils .shape a wide
triangular nose and two teardrop-shaped
ears, then model a tongue with red sugarpaste. Stick these pieces onto the
dog's head, then secure the head on the red collar with sugar glue. To finish, roll a sausage tapering to a point for a tail, and stick different-sized
black patches on the dog's body
USEFUL TIP Make sure that the covered cake board is completely dry before covering the cake with sugarpaste.
