Tips for successful cake making In Microwave

Cakes cook more evenly if placed on a low rack or an upturned plate on top of the turntable.

Cakes are best cooked in round containers. These are the ones that have been used to test all these cakes. Line the base of the dish with greaseproof paper as indicated in the recipe.

Square cakes and those cooked in loaf shapes will need shielding during cooking. Shield the corners on square cakes and each end of loaf dishes after half the cooking time.

DO NOT mix cakes in the food processor, this whisks in too much air and the cake will collapse during cooking.

The consistency of the cake batter should be slightly softer than usual, add an extra 1-2 x 15 ml ( 1-2 tbsp ) of warm milk or water. Packet cakes should be made according to the directions on the box. Cook on MEDIUM for 3-5 minutes.

For best results follow the recipes in this blog's BAKING section. If you have your own recipe use a similar one as a guide. If there is not a similar cake, cook on MEDIUM power for approx. 1 minute per 25 g ( 1 oz ) flour. Always check cakes after half the cooking time. Cooking times will vary.

Cool cakes for 5 minutes in the dish before turning them onto a rack. If you place a layer of damp kitchen paper over the wire rack it will stop the wire cutting into the cake.

Some cakes do not cook at all well in the microwave. Do not attempt cakes with no fat or those with whisked egg whites. If the margarine is too hard soften it on HIGH for 15-20 seconds.
