 Microwave Christmas Pudding

INGREDIENTS

  • 65 g or 2 ½ oz plain flour
  • 15 g or  ½ oz cocoa
  • 2x 5 ml or 2 tsp mixed spice
  • 75 g or 3oz breadcrumbs
  • 100 g or 4oz soft brown sugar mixed
  • 450 g or 1ln dried fruit
  • 100 g or 4oz Suet
  •  rind I orange
  • 2 eggs
  • 1½ x 15 ml or 1½ tbsp black treacle
  • 4 x 15 ml or 4 tbsp brown ale
  • 1 x 15 ml or 1 tbsp brandy 

Microwave Christmas Pudding Method:

Line pudding basin with cling film. Place the pudding mixture in the basin. Place all ingredients in a mixing bowl and beat together. Cook on HIGH for 5 minutes then leave to stand for 5 minutes and then cook on HIGH again for a further 2 minutes. ( This can be programmed into the oven, using a delay stand for stand time ) .

Note:

  • Shop-bought Christmas puddings should be removed from their wrappers and tipped onto a plate.
  • Heat on HIGH for only 1½ - 2 minutes for a large pudding individual puddings and portions need only 30 seconds.
  • NEVER LEAVE THE OVEN UN - ATTENDED WHILST COOKING OR REHEATING CHRISTMAS PUDDINGS

Serves 4

Cooking time: 5 mins. + 5 mins. + 2 mins.

Dish: 1-4 liter ( 212 pt ) Pyrex basin
