MINI MONSTERS CAKE METHOD:
Colour 375g ( 120z ) of sugarpaste mauve . Using icing sugar to prevent sticking, roll out the mauve sugarpaste and cover the cake board, then put it aside to dry.
Trim the crust from the cake and slice the top flat. Cut the cake into slightly uneven squares by cutting the cake into three strips, then cutting each strip into four, to get twelve pieces of cake. Trim the corners to round each piece off, then cover each cake with a layer of buttercream to help the sugarpaste stick.
To make a mini monster, first split 1.75kg ( 3 ½ lb ) of sugarpaste into six equally sized pieces Colour the six pieces red, yellow, orange, green, blue, and purple. Roll out the red sugarpaste and position a piece of cake on it. Then wrap the sugarpaste around the piece of cake, smoothing the join. completely closed.
Using scissors, snip up the sugarpaste a couple of times to create tufts of hair: Presse circles cuter in an angle smile, then dimple two corners of each mini monster's mouth with a cocktail stick.
Cover the remaining piece of cake in the same way. Make one
more red mini-monster then two each in yellow, orange, green, blue, and
purple. With the remaining white sugar paste, model flattened oval shapes for
eyes. Color 15g ( 1/2oz ) black and roll tiny ball-shaped pupils. Attach the
eyes and pupils with sugar glue.
To make the feet and hands, model teardrop shapes and flatten them slightly. Make two cuts in the wider end and smooth to remove ridges. For the feet, pinch around the center to indent and flatten under the toes. For hands, pinch to create a wrist. Model uneven ball-shaped noses. Secure all the eyes, noses, feet, and hands in place with sugar glue.
Carefully position each cake on the cake board. So that each monster can be separated easily when serving, do not use sugar glue when assembling all the monsters on the board, unless the cake has to travel. Don't forget to save a piece for the birthday monster!
USEFUL TIP
Polish the surface of the sugar paste with your hands to
remove excess icing sugar and to give each cake a sheen.
