Microwave Tips To Preserve

Making jams,Marmalades and chutneys are one of the most rewarding and satisfying pastimes. By using your microwave cooker it is much quicker and cleaner. No more hot smelly kitchens and heavy saucepans to wash out. With your microwave oven, you have the convenience of being able to make the preserve when it suits you, either from fresh fruits or frozen. Microwave jams, marmalades, and chutneys are fun, especially easy for children to make as there are no heavy saucepans to lift and no splashes. Once you know the basic rules, vegetables, fruits, and herbs can be used to create your own delicious flavors. The making of jams and marmalades is one of the most popular ways of preserving fruit, although methods do vary from recipe to recipe the basic principles remain the same.

EQUIPMENT: A large Pyrex mixing bowl is required to cook the jam in. DO NOT use jam kettles or saucepans in your microwave oven.

JAM JARS Use any jar that is unchipped, clean, and dry. To sterilize the jars, simply half-fill them with water, stand on the glass turntable and heat until the water boils. Empty, then drain upside-down on kitchen paper. The jars should be warm when the jam is poured into them.

JAM POT COVERS Either use conventional jam pot covers or cover the jars with cling film. Return to the oven and heat until the cling film billows up then leave to cool. This gives an excellent seal. This method can also be used for resealing opened jars.

HEAT PROOF JUG AND WOODEN SPOON These are used for stirring the jam and filling the jam jars.
