Microwave Easter Biscuits Recipe

INGREDIENTS

  • 75 g or 3 oz margarine
  • 75 g or 3 oz caster sugar
  • 1 egg plain
  • 150 g or 6oz flour
  • 50 g or 2oz currants
  • 2.5 ml or ½ tsp mixed spice

To glaze: egg white and caster sugar

MICROWAVE EASTER BISCUITS METHOD:

Cream together margarine and sugar, add the beaten egg, and fold in flour, spices, and currents. Make it into a firm dough. The dough should be rolled out on a floured surface to the thickness of a 10p coin. Cut into 7.5cm ( 3 " ) rounds.

Cook six at a time in a circle on the grease-proof paper, Cook on HIGH for I minute, brush with egg white, and sprinkle with caster sugar. Cook for a further 1 minute. Repeat with remaining biscuits.

Power: HIGH

Makes 12-16 biscuits

Cooking time: 2 mins.
