INGREDIENTS
- 450 g or 1lb granulated sugar
- 150 ml or 1/4 pint milk
- 150 g or 6oz desiccated coconut
- red food coloring
MICROWAVE COCONUT ICE METHOD:
Grease the serving dish. In a large mixing bowl, heat the sugar and milk on HIGH for 5 minutes until the sugar is dissolved. Stir in the coconut. Heat on HIGH for 3-32 minutes until the softball stage is reached. Pour half the mixture into the dish.
Color the second half and pour over the first layer. Leave until half set, mark into bars, and cut or break when cold
Power: MEDIUM - HIGH
Makes 48-50 squares
Cooking time: 15 mins.
