Microwave Coconut Crunch Jacks

INGREDIENTS

  • 125 g or 5oz demerara sugar
  • 125 g or 5oz rolled oats
  • 25 g or 1oz desiccated coconut
  • 125 g or 5oz soft margarine

MICROWAVE COCONUT CRUNCH JACKS METHOD:

Line the dish with greaseproof paper. In a bowl mix together the dry ingredients. Beat in the margarine. Press into a prepared dish and cook on HIGH for 5 minutes. Divide into squares while still hot.

VARIATION: 

For traditional flapjacks omit the coconut and add 1 x 5 ml ( 1 tsp ) ground ginger

Power: HIGH

Makes 12-16 slices

Cooking time: 5 mins.

Dish : 22 x 18 cm ( 9 " x 7 " ) oblong dish
