Microwave Paradise Wedges 

INGREDIENTS

pastry :

  • 100 g or 4oz plain flour
  • 50 g or 2oz margarine
  • water to mix

filling :

  • 2x 15 ml or 2tbsp raspberry jam
  • 50 g or 2oz caster sugar
  • 50g or 2oz  butter
  • 1 egg
  • 25 g or 1oz self-raising flour
  • 15g or ½ oz ground almonds
  • 25g or 1oz ground rice
  • 25g or 2oz glace cherries, chopped
  • 50g or 2oz sultanas
  • 25g or 1oz Walnuts
  • 1x 15 ml  or 1 tbsp  milk
  • caster sugar to dredge 

Microwave Paradise Wedges Method:

Mix ingredients for pastry together to form a dough. Line the dish with greaseproof paper. Roll out the pastry to line the base and halfway up the sides of the word. Prick the bottom with a fork and cook on HIGH for 3-5 minutes.

Spread the pastry with jam. In a bowl cream together the butter and sugar. Fold in the remaining ingredients after beating in the egg. Spread over the jam, then bake on MEDIUM for 5-7 minutes. When cold, sprinkle with caster sugar and cut into wedges.

Power HIGH - MEDIUM

Makes 8-12 wedges

Cooking time: 8-12 mins.

Dish: 20 cm ( 8 " ) round dish
