Microwave Lemon and Lime Marmalade

INGREDIENTS

  • 750 g  1½ lbs lemons and limes, mixed
  • 300 ml ½ / 2 pint water
  • 900 g 2 lbs
  • sugar

MICROWAVE LEMON AND LIME MARMALADE METHOD:

Finely peel the rind from the lemon and limes. Cut the peel into fine strips and put in a large bowl. Prepare the lemon juice and lime juice by squeezing the lemons and limes.
Add to the peel along with the water. 

Heat on HIGH for 8-10 minutes. Stir in the sugar. Heat on HIGH for batches of one minute stirring well, until all the sugar has dissolved.When the sugar has dissolved, heat on HIGH for 10-15 minutes until the correct set is achieved. 

Leave to cool, stirring occasionally so the peel is well distributed. lar, seal, and label. 
Store in a cool, dark place.

Power: HIGH

Makes 1-2 x 450 g ( 1 lb ) jars

Cooking time: 20 mins.

Dish: large mixing bowl
