Microwave Orange, Grapefruit and Lemon Marmalade
INGREDIENTS
- 2 grapefruits
- 2 oranges
- 2 lemons
- 300 ml or 1/2 pint water
- 900 g or 2 lbs of sugar
Microwave Orange, Grapefruit, and Lemon Marmalade Method:
Thinly peel the rind from the fruit. Cut the rind into the desired thickness and put it into a small basin. Cover with water ( 4 x 15 ml / 4 tbsp ). Heat on HIGH for 8-10 minutes, until soft. Meanwhile, remove the pith from the fruit and discard it.
Cut the fruit into slices, reserving the pips. Put the pips in a piece of cloth and tie. Put the fruit and 300 ml ( ½ pt ) water in a large bowl with the bag of pips. Heat on HIGH for 10 minutes.
Strain the fruit mixture into another
large bowl. Add the rind and juices. Stir in sugar. Heat on HIGH for I
minute batches, stirring well, until all the sugar has dissolved.
Cook on
HIGH for 10-15 minutes until the set is obtained. Cool, stirring occasionally.
Then pot, seal, and label.

Makes 1-2 x 450 g ( 1 lb ) jars
Cooking time: 30 mins.
