Microwave Lemon Curd
INGREDIENTS
- rind and juice of 4 lemons
- 450 g or 1lb
- caster sugar
- 4 eggs, beaten
- 100 g or 4 oz butter
MICROWAVE LEMON CURD METHOD
Combine all the ingredients in a large mixing bowl. Mix well so that all the ingredients are well combined. Heat on HIGH for a minute Stir well.
Continue to cook in 1-minute batches until the mixture starts to thicken, then stir every 30 seconds. ( The eggs will coagulate if overcooked. ). A spoon should be able to be coated with it if it is thick enough. Pot into warm jars.
Cover with a circle of waxed paper and a jam-pot cover.
DO NOT SEAL IN THE MICROWAVE

Makes I x 450 g ( 1 lb ) jar
