Microwave Carrot Cake Recipe

Power: MEDIUM

Makes 16 slices

Cooking time: 12 mins.

Dish : 20 cm ( 8 " ) souffle dish

INGREDIENTS

225 g or 8oz self-raising flour

2x 5 ml or 2 tsp baking powder

1 x 5 ml  or 1 tsp salt

125 g or 5oz  soft brown sugar

150 ml or 1/4 pt oil

3 eggs

225 g or 8oz  grated carrot finely chopped

50 g or 2oz walnuts

 

Microwave Carrot Cake Method:

    1. Line the base of a 20 cm ( 8 " ) souffle dish with a circle of greaseproof paper. 
    2. Sieve flour, baking powder, and salt together.
    3. Stir in sugar. 
    4. Beat together oil and eggs and fold in the dry ingredients.
    5. Add grated carrot and walnuts.
    6. Put the mixture in a prepared dish.
    7. Cook on MEDIUM power for 12 mins.
    8. Cool in the dish for 5 minutes before turning it onto a wire rack.

Frosting :

 100 g or 4oz cream cheese

50g or 2oz icing sugar

2 x 15ml or 2 tbsp lemon juice

  • Beat ingredients together and use them to ice the cake.
  • Decorate with marzipan carrots
