Makes 16 slices
Cooking time: 12 mins. 
Dish : 20 cm ( 8 " ) souffle dish 
INGREDIENTS
225 g or 8oz self-raising flour
2x 5 ml or 2 tsp baking powder
1 x 5 ml  or 1 tsp salt 
125 g or 5oz  soft brown sugar
150 ml or 1/4 pt oil
3 eggs
225 g or 8oz  grated carrot finely chopped
50 g or 2oz walnuts
Microwave Carrot Cake Method:
- Line the base of a 20 cm ( 8 " ) souffle dish with a circle of greaseproof paper.
 - Sieve flour, baking powder, and salt together.
 - Stir in sugar.
 - Beat together oil and eggs and fold in the dry ingredients.
 - Add grated carrot and walnuts.
 - Put the mixture in a prepared dish.
 - Cook on MEDIUM power for 12 mins.
 - Cool in the dish for 5 minutes before turning it onto a wire rack.
 
Frosting :
50g or 2oz icing sugar
2 x 15ml or 2 tbsp lemon juice
- Beat ingredients together and use them to ice the cake.
 - Decorate with marzipan carrots
