Microwave Basic White Sauce Recipe

 INGREDIENTS

  • 15 g or ½ oz margarine
  • 15 g or ½ oz flour
  • 300 ml or ½ pt milk
  • salt and pepper

Microwave Basic White Sauce Method:

Melt the margarine in the jug on HIGH for 30-45 seconds. Stir in flour to make a roux.

Gradually add milk, stirring continuously until well combined. Cooked for half the time ( 1½ mins . HIGH ). Stir sauce. Cook for the remaining time ( 1-1½)

 The sauce should be smooth and glossy and coat the back of the spoon.

Variations of White Sauce

Sauce: Anchovy

Additions To Basic Recipe: 10 ml ( 2 tsp. ) anchovy essence. 5 ml ( 1 tsp . ) lemon juice. A few drops of red coloring

Variations Of Method: Stir into the cooked sauce

Sauce: Aurore

Additions To Basic Recipe: 6 x 5 ml ( 6 tsps . ) tomato purée . 2.5 ml ( ½ tsp . ) castor sugar .

Variations Of Method: Stir into cooked sauce.

Sauce:  Caper

Additions To Basic Recipe: 2 x 15 ml ( 2 tbsps . ) capers, roughly chopped . 2 x 5 ml ( 2 tsp . ) vinegar from capers

Variations Of Method: Stir into the cooked sauce

 Sauce:. Parsley

Additions To Basic Recipe: 1 x 15 ml ( 1 tbsp . ) chopped parsley. 1 x 5 ml ( 1 tsp . ) lemon juice.

Variations Of Method: Stir into the cooked sauce

Sauce: Cheese

Additions To Basic Recipe: 50 g ( 2 oz . ) grated cheese. The shake of cayenne pepper.

Variations Of Method: Stir into cooked sauce and reheat for 30 seconds

 Sauce: Mushroom

Additions To Basic Recipe: 50 g ( 2 oz . ) mushrooms, sliced. 1 x 5 ml ( 1 tsp . ) lemon juice.

Variations Of Method:. Add mushrooms to margarine, cook for 2 minutes then continue as recipe

 Sauce: Mustard

Additions To Basic Recipe: 1 x 5 ml ( 1 tsp . ) dry mustard OR I x 15 ml 11 tbsp. ) French mustard.

Variations Of Method: Stir into the cooked sauce

 Sauce: Onion

Additions To Basic Recipe: I onion, finely sliced.

Variations Of Method: Add the onion to the margarine, cook for 2 minutes then proceed with the recipe.

 Sauce: Shrimp

Additions To Basic Recipe: 50 g ( 2 oz.1 shrimp. Squeeze lemon juice. 1 x 15 ml ( 1 tbsp. ) double cream.

Variations Of Method: Add to cooked sauce. Reheat for I minute.
