MICROWAVE TOMATO AND ORANGE SOUP
INGREDIENTS
- 450 g tomatoes, skinned and deseeded
- I small onion, chopped finely
- I bay leaf
- I bouquet garni
- 600 ml chicken stock
- juice of one orange
- salt and pepper
- 2 x 15 ml =2 tbsp cornflour
- 3 x 15 ml =3 tbsp water
MICROWAVE TOMATO AND ORANGE SOUP RECIPE:
Put the tomatoes and onions in a basin and cook on HIGH for 2 minutes. Place in a food processor and blend into a pulp or press through a sieve. Place the puree in a soup bowl or tureen. Add the stock gradually, stirring all the time.
Add the seasonings and orange juice. Blend the cornflour with the
water and stir into the soup. Cover with cling film and cook on HIGH for a
further 3-5 minutes stirring occasionally.

Note:
This soup may be served hot or cold.
