Microwave Stuffed Breast of Lamb with Sweetcorn

INGREDIENTS

  • 1.5 kg or 3lb, 2 breasts of lamb, boned

Stuffing :

  • I onion,
  • 1 x 200 g or 7oz chopped can sweetcorn, drained
  • grated rind of 1 lemon
  • 50 g or 2oz breadcrumbs
  • 1 egg
  • salt and black pepper
  • 2 dashes of Worcester sauce
  • lamb seasoning 

Microwave Stuffed Breast of Lamb with Sweetcorn Method:

Lay breasts skin side down on a board. In a basin combine all the ingredients for the stuffing. Spread over the breasts. Roll the breasts carefully from end to end.

Tie securely at intervals with fine string. Weigh roasts together and calculate time Place them together on a trivet in a suitable dish. Sprinkle with lamb or microwave browning spice.

Cover the dish with cling film. Cook on MEDIUM for 10 minutes per 450 g ( 1 lb ) or on Auto with a touch less. Stand for 15 minutes before carving.
