Microwave Stew and Dumplings Recipe

Microwave Stew and Dumplings

INGREDIENTS

  • 750 g or 1½ lb stewing steak, cubed
  • 3 x 15 ml or 3 tbsp seasoned flour
  • 2 onions, skinned and sliced
  • 3 carrots, pared and sliced
  • salt and pepper
  • 1 x 396 g or 14 oz  can of tomatoes
  • 900ml or 1½ pls Beef stock

Microwave Stew and Dumplings Method:

Cut vegetables into even-sized pieces. Old root vegetables should be diced. New vegetables can be thinly sliced. The stock should be made with hot water. Cut meat into 2 cm ( 4 inches) pieces, remove any gristle, and trim the fat. Toss the meat in seasoned flour.

Put all the ingredients into a large casserole dish. Stir well. Put a small plate on top of the meat.

This keeps the meat and vegetables under the stock and stops them from dehydrating. 
Cover the casserole with a lid.

Cook on HIGH for 10 minutes - this brings the casserole to a boil, then set SIMMER for 60 minutes, or cook on Auto. Remove the lid and plate. Add dumplings and cook on HIGH for 5-7 minutes.

Note:- use part stock, wine, or beer. add any of your favorite vegetables. parsnips, Swede, turnips,s, etc.

Dumplings

INGREDIENTS

  • 100 g or 4oz self-raising flour
  • 50 g or 2oz shredded suet
  • water to mix
  • chopped parsley ( optional )

Dumpling Method :

Toss suet into flour, and mix to dough waterDivide into 2.5 cm ( 1 " ) balls and drop into hot cooked stew. DO NOT cover. Cook for 5 minutes on HIGH

Note: At this point adjust the seasoning and thicken using cornflower mixed with a little water. Cook on HIGH for 5 minutes. Then add dumplings. Add parsley to flour.
