Microwave Soused Herrings

INGREDIENTS

  •  225 g each or  8 oz each,4 large herrings cleaned and boned
  •  salt and pepper
  •  I small onion cut into rings
  •  6 peppercorns 
  • 1-2 bay leaves 
  • 150 ml or ½ pint malt vinegar 
  • 150 ml  or ½  pint water   

Microwave Soused Herrings Method: 

Remove heads, tails, and fins from the herrings. Sprinkle the flesh with salt and pepper. Roll up from the head end and secure with wooden cocktail sticks. Pack into a shallow dish and add peppercorns, bay leaves, and onion. 

Pour over the water and vinegar. Cover the dish with cling film and cook on HIGH for 6-8 minutes, or on Auto sensor. Leave to cool in the liquid, and chill well before serving.
