Microwave Soused Herrings
INGREDIENTS
- 225 g each or 8 oz each,4 large herrings cleaned and boned
- salt and pepper
- I small onion cut into rings
- 6 peppercorns
- 1-2 bay leaves
- 150 ml or ½ pint malt vinegar
- 150 ml or ½ pint water
Microwave Soused Herrings Method:
Remove heads, tails, and fins from the herrings. Sprinkle the flesh with salt and pepper. Roll up from the head end and secure with wooden cocktail sticks. Pack into a shallow dish and add peppercorns, bay leaves, and onion.
Pour over the water and vinegar. Cover the dish with cling film and cook on HIGH for 6-8 minutes, or on Auto sensor. Leave to cool in the liquid, and chill well before serving.
