Microwave Savoury Quiche Recipe
INGREDIENTS
pastry :
- 225 g or 8 oz plain flour
- 100 gor 4 oz margarine
- cold water to mix
filling :
- 100 g or 4 oz grated cheese
- 100 g 4 oz shrimp
- 1 small onion, chopped
- ½ / 2 red pepper, sliced
- 2 x 15 or 2 tbsp ml sweetcorn
- 2 tomatoes, sliced
- 3 eggs
- 450 ml or 1/2 pint milk
- salt and pepper
- mixed herbs
Microwave Savoury Quiche Method:
Rub the fat into the flour. Mix to a dough with cold water. Lightly grease a 25 cm ( 10 " ) flan dish.
Roll out the pastry thinly and line the dish. Cover with a kitchen towel and put an upturned
plate in the base. Cook on HIGH for 4 minutes.
Note: pastry should be a consistent color and look -dry. In a basin, put the
onion, pepper, and margarine. Cook on HIGH for 2-3
minutes. Mix together the eggs, seasoning, herbs, and milk. Remove the plate and paper from the cooked pastry case and
sprinkle over the cheese, shrimp, tomatoes, sweetcorn, onion, and peppers.
Pour over the egg mixture.
Cook on LOW for 15-16
minutes until the center is firm. Serve hot or cold. For an 18 cm ( 7 " ) flan use half the quantity of
pastry and reduce the eggs to 2 and milk to 300 ml ( ½ pt ). Cook on LOW for 10 minutes.
