STEAMED AND EASY CHRISTMAS PUDDINGS
EASY PLUM PUDDING
- 1kg mixed fruit
- 3 eggs
- 1 cup brown sugar, firmly packed
- 300ml carton cream
- 2 1/4 cups plain flour
- 1 teaspoon nutmeg
- 1 teaspoon bicarbonate of soda
Chop fruit and place in large basin Beat eggs and sifted brown sugar until thick and creamy, add to fruit with cream, and mix well. Add sifted dry ingredients, and mix well Boil or steam for 5 hours, and boil or steam further 1 hour on the day of serving to reheat if steaming, place mixture into - a greased 10-cup steamer

- 125g raisins
- 1 cup water
- 1/2 cup white sugar
- 1/2 cup brown sugar, lightly packed
- 125g butter
- 1 teaspoon bicarbonate of soda
- 2 eggs
- 1 cup plain flour
- 1 cup self-raising flour
- 1 teaspoon mixed spice
- ½ teaspoon cinnamon
- 2 tablespoons rum wat
Combine chopped fruits. sugars and butter. Stir until butter h melted and bring to boil; reduce the simmer to uncovered 8 minutes stri soda Stand until mixture has become cold Stir in eggs. sifted dry ingredients and rum Steam in - a greased 10-cup steamer for 5 hours, steam further for 1 hour on the day of serving
To Steam: Fill the pudding mixture into the well-greased aluminum steamer. cover with a large piece of aluminum foil Put it firmly on the steamer, then crush surplus foil firmly around the lid to help form a good seal Put the pudding in the large boiler with enough boiling water to come partway up the side of the steamer Cover with a tight-fitting lid. replenish with more boiling water as necessary during cooking time steamer in When cold, store in refrigerator for up to 6 weeks
