SEAFOOD WITH MANGO 

INGREDIENTS:

  • 1 avocado 
  • 1 mango 10 cooked king prawns 
  • ½ cup bottled French dressing 
  • 2 tablespoons lemon juice 
  • 2 tablespoons mayonnaise 
  • 2 teaspoons mild chili sauce pepper 
  • 1 tablespoon chopped chives curly endive 

SEAFOOD WITH MANGO RECIPE:

Cut avocado in half, remove stone; peel and slice avocado; peel and slice mango; shell and devein prawns. Combine avocado, mango, and prawns, and pour over the combined French dressing and lemon juice. Season with pepper, and stand for 10 minutes. Combine mayonnaise and chili sauce, drain the dressing from the prawn mixture into the mayonnaise mixture, and mix well. Pour dressing over the prawn and fruit mixture. Refrigerate until ready to serve. Serve with curly endive, and sprinkle with chopped chives.
