PICKLED CHILLIES
INGREDIENTS:
- 500g large chilies
- % cup cooking salt
- 3 cups water
- 3 cups white vinegar
- 1 tablespoon cooking salt, extra
- 2 tablespoons whole black peppercorns
PICKLED CHILLIES RECIPE:
Wash chilies, cut stalks from chilies cut away any bruised or marked parts of chilies, do not remove seeds Place chilies, salt, and water in the basin, stir until it is dissolved, cover, and stand 24 hours. Drain, and rinse well under cold air Pack chilies into hot sterilized jars
Combine vinegar, extra salt, and peppercorns in the pan, bring to a boil, reduce heat, cover, and simmer for 5 minutes. remove from heat, and stand for 5 minutes Pour over chilies and seal when cold Store for 6 weeks before using.
