MEXICAN MEAT TURNOVERS 

INGREDIENTS

  • 250g minced steak 
  • 1 small onion 
  • 1 clove garlic 
  • pinch chili powder 
  • 1 small green pepper 
  • 1/2  x 400g can tomatoes 
  • 1 tablespoon tomato paste 
  • 1/4 cup water 
  • 1 beef stock cube 
  • 1/2 x 310g can red kidney beans 
  • salt, 

  • pepper 

  • 2 x 375g packets of puff pastry 
  • 1 egg for glazing 
  • oil for deep-frying 

 MEXICAN MEAT TURNOVER RECIPE:

Add meat to the pan, and stir over high heat until meat is well browned, mashing with a fork to break up lumps Add finely chopped onion, and cook until tender Add crushed garlic and chili powder to pan cook 1 minute Add sliced pepper and undrained mashed tomatoes mix well Stir in water, crumbled stock cube, tomato paste. salt and pepper. Bring to boil, reduce heat, simmer gently covered for 30 minutes, remove lid, simmer further 15 minutes, and cool. 

Add drained, rinsed beans to cold meat mixture, and mix well Roll out one packet of puff pastry very thinly on a lightly floured surface, cut into rounds with a 9cm cutter Put a teaspoon of mixture onto each round, glaze edges of the pastry with beaten egg, fold in half, press edges together Repeat using a second packet of pastry. Deep-fry, a few at a time in hot oil until golden brown. Drain turnovers on absorbent paper
