ITALIAN VEGETABLE SALAD
YOU WILL NEED:
- 2 red tomatoes
- 1 lettuce
- 1 bunch of curly endives
- 2 Belgian endives ( witlof )
- 60g ( 2oz ) green olives
- 60g (20) black olives
DRESSING
- ½ cup white vinegar
- ½ cup olive oil
- 4 basil leaves ( or ½ teaspoon dried basil )
- salt,
- pepper
- pinch sugar
ITALIAN VEGETABLE SALAD RECIPE:
Cut tomatoes into quarters. Whisk together oil, vinegar, and
finely chopped basil. Season dressing with salt, pepper, and sugar.
Combine tomatoes and olives in a bowl, pour dressing over, and mix lightly: let stand for 30 minutes.
Trim ends from Belgian endive, separate into pieces. Wash and dry all salad greens, and arrange greens decoratively on the large platter: place tomatoes and olives in the center of the greens. Spoon a little dressing over the top of the salad. Refrigerate until ready to serve.
