ITALIAN CALAMARI SALAD
YOU WILL NEED:
- 500g ( 11b ) squid
- ½ cup lemon juice
- ½ cup oil
- 1 small lettuce
- 6 shallots
- 1 clove garlic
- 1 tablespoon mayonnaise
- salt,
- pepper
ITALIAN CALAMARI SALAD
Hold squid firm with one hand. With the other hand, hold your head and pull gently. The head and inside body of the squid will come away in one compact piece. Remove the long, thin, plastic-like backbone from the open end. Peel off the wing and skin, starting from the pointed end, and working toward the open end, as shown.
Clean squid under cold running water, then cut into thick rings about 5mm ( 1/4 in ). Drop squid into rapidly boiling water, reduce heat, and simmer for 10 to 15 minutes or until squid is tender ( cooking time depends on the size of squid ). Drain. Combine lemon juice and oil, add squid, mix well, cover, and refrigerate overnight.
Next day, drain the squid and reserve marinade. Place finely shredded lettuce, chopped shallots, and squid in a large bowl. Combine reserved marinade with crushed garlic, mayonnaise, salt, and pepper, and mix well. Pour over salad. toss well.
