ITALIAN MARINATED CALAMARI
YOU WILL NEED :
- 500g ( 1lb ) squid
- ½ cup lemon juice
- ½ cup oil
- 1 clove garlic
- 1 tablespoon chopped parsley
ITALIAN MARINATED CALAMARI RECIPE:
Hold the squid with one hand; with the other hand, hold the head and pull gently; the head and inside of the body will come away in one compact piece. Cut tentacles from the head. Remove bone found at the open end of the squid ( it looks like a long, thin piece of plastic ).
Clean squid under cold running water then rub off the brown outer skin. Cut squid into 5mm ( in ) rings.
Drop rings into rapidly boiling water, reduce heat, and simmer for 10 to 15 minutes, or until squid is tender. Drain. Combine lemon juice and oil, add squid, cover, and refrigerate overnight. Next day, add crushed garlic and parsley to the marinade, mix well, let stand 2 hours or longer in the Mari marinade; serve in the marinade.
