ITALIAN MATRICIANA SAUCE
YOU WILL NEED:
- 1 onion
- 6 rashers lean bacon
- 500g ( 11b ) ripe tomatoes
- 1 red chili
- 1 1/2 tablespoons oil
ITALIAN MATRICIANA SAUCE
Peel onion, and chop finely. Remove the rind from the bacon, and cut the bacon into thin strips across. Peel and seed tomatoes, and chop roughly. Seed chili, and chop finely. Heat oil in a pan, add onion and bacon.
Stir over medium heat for 5 minutes, until onion is transparent, drain off surplus fat. Add tomato and chili, and mix well. Simmer the sauce gently, uncovered for 5 minutes, stirring occasionally. Serve with grated pecorino or parmesan cheese.
Serves 4
Note: If
available, substitute pancetta for the bacon. Pan cetta Italian salted pork is
available in most Italian delicatessens. -
