ITALIAN CHICKEN LIVER SAUCE
This delightful, creamy, chicken liver sauce comes
from Pulcinella, a popular Neapolitan restaurant in Kings Cross, Sydney.
YOU WILL NEED:
- 250g ( 80z ) chicken livers
- 2 onions
- ½ cup oil
- ½ cup cream
- 2 eggs
- salt,
- pepper
- grated parmesan cheese
ITALIAN CHICKEN LIVER SAUCE RECIPE:
Peel and slice onions; wash, trim, and chop chicken livers. Cook onions gently in oil until golden brown; add chicken livers, and cook until they just change color. Remove from heat.
Add cream to chicken liver and onion mixture, and mix well. Return to heat, and cook another 2 minutes, uncovered, over low heat. Quickly stir in lightly beaten eggs, and season with salt and pepper.
Don't cook but remove from heat immediately. Serve over pasta and top
with grated parmesan cheese.
