NOODLES AND VEGETABLES WITH SATAY DRESSING

INGREDIENTS

  • 150g fresh egg noodles
  • 1 teaspoon sesame oil
  • 425g can baby Com, drained
  • 3 small green cucumbers, peeled
  • 1 cup ( 100g ) mung bean sprouts

SATAY DRESSING

  • 2 tablespoons smooth peanut butter
  • 2 tablespoons water
  • 2 tablespoons light soy sauce
  • 3 teaspoons sesame oil
  • 2 tablespoons lime juice
  • 2 teaspoons rice vinegar
  • 2 cloves garlic, crushed
  • 2 teaspoons grated fresh ginger
  • 1 tablespoon sugar

NOODLES AND VEGETABLES WITH SATAY DRESSING METHOD:

Add noodles to the pan of boiling water, boil, uncovered until just tender; drain. Toss noodles with oil in a bowl. Cut corn and cucumbers into strips, and add to noodles with sprouts. Add dressing. toss well; serve warm or cold. 

Satay Dressing: Combine all ingredients in the pan, stir over heat until combined and heated through; do not boil.

Serves 6.

Note: The recipe can be made a day ahead.

Storage: Covered, in refrigerator.

Freeze: Not suitable.

Microwave: Noodles are suitable.
