NOODLES AND VEGETABLES WITH SATAY DRESSING
INGREDIENTS
- 150g fresh egg noodles
- 1 teaspoon sesame oil
- 425g can baby Com, drained
- 3 small green cucumbers, peeled
- 1 cup ( 100g ) mung bean sprouts
SATAY DRESSING
- 2 tablespoons smooth peanut butter
- 2 tablespoons water
- 2 tablespoons light soy sauce
- 3 teaspoons sesame oil
- 2 tablespoons lime juice
- 2 teaspoons rice vinegar
- 2 cloves garlic, crushed
- 2 teaspoons grated fresh ginger
- 1 tablespoon sugar
NOODLES AND VEGETABLES WITH SATAY DRESSING METHOD:
Add noodles to the pan of boiling water, boil, uncovered until just tender; drain. Toss noodles with oil in a bowl. Cut corn and cucumbers into strips, and add to noodles with sprouts. Add dressing. toss well; serve warm or cold.
Satay Dressing: Combine all ingredients in the pan,
stir over heat until combined and heated through; do not boil.
Serves 6.
Note: The recipe can be
made a day ahead.
Storage: Covered, in
refrigerator.
Freeze: Not suitable.
Microwave:
Noodles are suitable.
