FRESH HERB PASTA WITH HOT AND SPICY DRESSING

INGREDIENTS

  • 2 carrots
  • 500g penne pasta
  • 1/2 cup chopped fresh basil
  • 1 / 2 cup chopped fresh mint
  • 1/2 cup chopped fresh coriander
  • 1/2 cup bean sprouts
  • 2 teaspoons oil
  • 2 cloves garlic, sliced
  • 2 tablespoons unsalted chopped cashews

HOT ' N ' SPICY DRESSING

  • 2 tablespoons oil
  • 1/4 cup olive oil
  • 1 teaspoon sesame oil
  • 1/4 cup lime juice
  •  2 tablespoons light soy sauce
  • 1⁄2 teaspoon sugar
  • 2 teaspoons sambal oelek

FRESH HERB PASTA WITH HOT AND SPICY DRESSING METHOD:

Cut carrots into thin sticks. Add pasta to a large pan of boiling water, boil, uncovered, until just tender; drain. Combine pasta, carrots, herbs, and sprouts in a bowl; add dressing, and toss well. Heat oil in the pan, add garlic, cook until lightly browned and crisp. Top salad with garlic and nuts.

Hot ' n ' Spicy Dressing: Combine all ingredients in a jar; shake well.

Serves 6.

Note: Salad is best made close to serving.

Freeze: Not suitable.

Microwave: Pasta suitable.
