FETTUCINE WITH APPLE BUTTERSCOTCH SAUCE
INGREDIENTS
- 3 cups apple juice
- 150g fettuccine pasta
APPLE BUTTERSCOTCH SAUCE
- 2 large apples, peeled
- 1 tablespoon sugar
- 1/4 cup water
- 1/4 teaspoon ground cinnamon
- 50g butter
- 2/3 cup brown sugar, firmly packed
- 1/2 cup thickened cream
- 1 teaspoon rum
FETTUCINE WITH APPLE BUTTERSCOTCH SAUCE METHOD:
Bring juice to boil in a pan, add pasta, boil, uncovered, until just tender; drain. Serve hot sauce over hot pasta. Apple Butterscotch Sauce: Slice apples thinly, combine in a pan with sugar, water, and cinnamon, bring to a boil, and simmer covered, for about 10 minutes or until tender; drain.
Melt butter in a pan, add brown sugar and cream, and stir until combined. Bring to a boil. simmer, uncovered, without stirring, for 5 minutes. Remove from heat, stir in rum and apples.
Serves 4.
Note: Recipe can be made 3 hours ahead.
Storage: Covered, at room temperature
Freeze: Not suitable.
Microwave: Pasta proper.
