WARM BEEF AND WALNUT SALAD
INGREDIENTS
- 500g pasta elbows
- 500g piece beef eye - fillet
- 2 tablespoons lemon juice
- 2 tablespoons light soy sauce
- 1 tablespoon oyster sauce
- 2 cloves garlic, crushed
- 2 tablespoons olive oil
- 1 red pepper, chopped
- 1 cup ( 120g ) chopped walnuts
- 4 green shallots, chopped
DRESSING
- 1/4 cup olive oil
- 1 clove garlic, crushed
- 1 tablespoon white vinegar
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh chives
WARM BEEF AND WALNUT SALAD METHOD:
The noodles should be cooked in a large pan of boiling water, uncovered, for about 10 minutes, and then drained, to keep warm.
Cut beef into 1cm cubes, combine with juice, sauces, and garlic in a bowl; cover, and refrigerate for 1 hour. Heat oil in a pan, add the beef mixture in batches, and cook, stirring, until the beef is cooked as desired.
Combine beef mixture and pasta in a bowl; keep warm. Add
pepper to the pan of boiling water, boil for 1 minute; drain. Add pepper, nuts,
shallots, and dressing to pasta; toss well
Dressing:
Combine all ingredients in a pan, and stir over heat until heated through.
Serves 4.
Note: The recipe is best
made just before serving.
Freeze: Not
suitable.
