SPICY MUTTON TORTELLINI SALAD
INGREDIENTS
- 500g mutton (cooked)
- 2 carrots
- 1 red pepper
- 1 green pepper
- 250g baby mushrooms, chopped
- 1/4 cup black olives, sliced
PESTO DRESSING
- 1/4 cup olive oil
- 1/4 cup white vinegar
- 2 cloves garlic, crushed
- 1/4 cup chopped fresh basil
- 2 tablespoons grated parmesan cheese
- 1 tablespoon tomato paste
SPICY MUTTON TORTELLINI SALAD METHOD:
Add tortellini to a large pan of boiling water, boil,
uncovered, until just tender; drain. Rinse tortellini under cold water;
drain. Cut carrots, mutton, and peppers into thin strips. Combine tortellini,
uncooked vegetables, and olives in a bowl, and pour over the dressing.
Pesto Dressing:
Combine all ingredients in a bowl; mix well.
Serves 4.
Note: Salad can be
made a day ahead.

Covered, in refrigerator.
