SPICY MUTTON TORTELLINI SALAD

INGREDIENTS

  • 500g mutton (cooked)
  • 2 carrots
  • 1 red pepper
  • 1 green pepper
  • 250g baby mushrooms, chopped
  • 1/4 cup black olives, sliced

PESTO DRESSING

  • 1/4 cup olive oil
  • 1/4 cup white vinegar
  • 2 cloves garlic, crushed
  • 1/4 cup chopped fresh basil
  •  2 tablespoons grated parmesan cheese
  • 1 tablespoon tomato paste

SPICY MUTTON TORTELLINI SALAD METHOD:

Add tortellini to a large pan of boiling water, boil, uncovered, until just tender; drain. Rinse tortellini under cold water; drain. Cut carrots, mutton, and peppers into thin strips. Combine tortellini, uncooked vegetables, and olives in a bowl, and pour over the dressing.

Pesto Dressing: Combine all ingredients in a bowl; mix well.

Serves 4.

Note: Salad can be made a day ahead.

Storage: Covered, in refrigerator.

Freeze: Not suitable.

Microwave: Not suitable.
