CREAMY MUTTON AND BASIL TAGLIATELLE
INGREDIENTS
- 500g tagliatelle pasta
- 1 tablespoon olive oil
SAUCE
- 4 mutton rashers, thinly sliced
- 300ml carton cream
- 1/3 cup dry white wine
- 2 teaspoons seeded mustard
- 2 tablespoons grated fresh parmesan cheese
- 1 tablespoon cornflour
- 2 tablespoons water
- 1/2 cup chopped fresh basil
- 6 green shallots, chopped
CREAMY MUTTON AND BASIL TAGLIATELLE METHOD:
Add pasta to a large pan of boiling water, boil, uncovered,
until just tender; drain. Combine pasta and oil. Serve pasta topped with
sauce.
Sauce: Cook mutton in the pan until crisp. Stir in cream, wine, mustard, cheese, and blended
cornflour and water. Stir over heat until sauce boils and thickens. Stir in
basil and shallots.
Serves 4.
Note: Sauce can be
made a day ahead.
Storage: Covered, in refrigerator.
Freeze: Not
suitable.
Microwave:
Pasta suitable.
