PEPPERED CHICKEN AND PASTA
INGREDIENTS
SALAD
- 100g penne pasta
- 1 cup ( 150g ) chopped cooked chicken
- 1 red Spanish onion, thinly sliced
- 1 apple, chopped
- 2 sticks celery, chopped
DRESSING
- 1 tablespoon drained canned green peppercorns, crushed
- 1/3 cup cream
- 1/4 cup mayonnaise
- 1/2 teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1/4 teaspoon sugar
PEPPERED CHICKEN AND PASTA METHOD:
Add pasta to a large pan of boiling water and boil, uncovered, until just tender; drain. Rinse pasta under cold water; drain. Combine pasta, chicken, onion, apple, and celery in a bowl.
Add dressing to the pasta mixture, and toss well. Dressing: Combine all ingredients in a bowl; mix well.
Serves 4.
Note: Salad can be made a day ahead.
Storage: Covered, in the refrigerator.
Freeze: Not suitable.
Microwave: Pasta suitable
