CHICKEN WITH HERBED LEMON SAUCE
INGREDIENTS
- 350g lasagnette pasta
- 60g butter
- 1 teaspoon grated lemon rind
- 1/4 cup lemon juice
- 300ml carton cream
- 2 tablespoons chopped fresh chives
- 1 tablespoon chopped fresh thyme
- 3 cups ( 450g ) chopped cooked chicken
- 1/2 cup grated fresh parmesan cheese
CHICKEN WITH HERBED LEMON SAUCE METHOD:
Boil the pasta until just tender, uncovered, in a large pot of boiling water; drain. Heat butter, rind, and juice in a pan until the butter is melted.
Add cream, half the
herbs, chicken, and pasta, and stir until heated through. Serve sprinkled with
remaining herbs and cheese.
Serves 4.
Note: The recipe is best made just before serving.
Freeze: Not suitable.
Microwave: Pasta suitable.
