MUTTON AND MACARONI SALAD
INGREDIENTS
- 1 1/3 cups ( 200g ) macaroni pasta
- 1/2 cup peanut butter
- ¹ / 2 cup water
- 2 teaspoons sesame oil
- 1 1/2 tablespoons light soy sauce
- 1 tablespoon lime juice pinch cayenne pepper
- 2 small green cucumbers, seeded
- 5 green shallots, chopped
- 300g barbecued mutton,
- sliced lettuce leaves
MUTTON AND MACARONI SALAD METHOD:
Add pasta to a large pan of boiling water, boil, uncovered, until just tender; drain. Rinse pasta under cold water; drain. Combine peanut butter, water, oil, sauce, juice, and cayenne in the pan, and stir over heat until smooth and combined. Cut cucumbers into strips, and combine in a bowl with shallots, mutton, and pasta. Pour over peanut butter mixture; mix well Serve over lettuce leaves.
Serves 4.
Note: Recipe can be made 6 hours ahead
Storage: Covered, in refrigerator.
Freeze: Not suitable.
Microwave: Suitable.
