Cut the cake into nine equal-sized squares, as in the photograph below Spread each of the squares of cake with buttercream to help the sugarpaste stick
Cover the top of one piece of cake by rolling out 15g ( ½ oz
) of white sugarpaste and placing the top of the square down onto it, then cutting
around. Cover the top of all the other squares, in the same way, To make a bag,
roll out 155g ( 5oz ) of white sugarpaste and cut a straight edge. Place the
bottom edge of the square on this line. Cut the top of the sugarpaste in a
straight line 2.5cm ( 1in ) above the cake. Wrap the white sugarpaste around
the cake, trimming any excess at the join Stick the join together with sugar
glue. then gently rub the join closed Cover all the other squares in the same
way.
Colour some sugarpaste trimmings red and blue. To decorate
the bags, thinly roll out the petal cutter the pieces of green, red, and blue sugarpaste
and cut out balloon shapes with the petal cutter, sticking in their place on the
sides of the bags with sugar glue
Color 410g(13oz )of
sugarpaste golden brown. To make one teddy roll 22g(1/4 oz) into a ball for a
body Roll 15g ( ½ oz ) into another ball for a head and stick on to the body
with sugar glue. With 7g ( ¼ oz ). shape two oval-shaped feet, make a ball-shaped muzzle, two tiny ears, and two sausage-shaped arms Press a cocktail
stick into each ear to indent. Mark a line on the muzzle using a knife. Press
the miniature circle cutter in at an angle to indent the smile and dimple by
pressing the tip of a cocktail stick into each comer.
Make eight more teddy bears in this way turning their heads
slightly to look in different directions Color some of the sugar paste trimmings black and shape all the little triangular noses. Fill each bag with
a teddy, a lollipop, and a few sugar-coated chocolates. When the cakes are
dry, draw fine lines for the balloon strings on each bag with the black
food coloring pen. Draw dots for eyes. Finally, position the cakes on the
cake board. ensuring that the sides with the balloons are facing outwards.
