TOY BOAT CAKE METHOD:
Color 315g ( 100z ) of sugarpaste blue. Using icing sugar to prevent sticking, roll out and cover the cake board completely, trimming excess from around the edge To indent water ripples, firmly press down the rim of the two bowls several times into the sugar paste covering.
Trim the cake crust and slice the flat. Cut the layer from the top remaining 1cm (7in) in depth. Cut into squares and stack together to make the cabin Trim so the stack tappers in at the base, then sandwich together with buttercream Spread the surface with buttercream.
Turn the cake upside down. Cut a wedge off one end to form the back of the boat, then cut wedges from either side to shape the sides of the boat so they form a point at the front. Turn the cake over and spread a layer of buttercream over the surface.
Color 1kg ( 2lb ) of sugar paste red. Roll a long sausage and position it around the top of the boat to create a lip. Roll out 875g (1 3/4 lb) of red sugar paste and cover the cake smoothing around the shape Smooth the sugar paste and trim. Position the boot on the cake board and smooth the surface with a cake smoother,
Color, then roll out 155g ( 5oz ) of yellow sugar paste Cover each side of the cabin separately by putting the cake down on the sugar paste and cutting around, then smooth the joins closed. Remove a circle of sugar paste for each porthole. Color, then roll out 7g ( 1/4oz ) of black sugar paste thinly, and cut circles to slot in the spaces. Stick the cabin on the boat Colour 125g ( 40z ) of sugar paste green. Roll out 45g ( 1 1/2 oz ) and cut a square to fit the roof,
Roll the remaining green and red separately into two balls. Stick the two together, and over the work surface into a teardrop shape using the cake smoother. Cut at either end to create a straight edge and stick in position on top of the cabin to form the funnel,
Roll out the white sugar paste and cut five circles using the larger circle cutter Cut a smaller circle from the center. Stick against the side of the boat. Roll out red sugar paste and cut two triangles for each lifebelt. Roll thin sausages of yellow sugar paste. Press with a cocktail stick at intervals to create a rope effect. Cut into lengths and stick between each lifebelt.
