 Microwave Sussex Pond Pudding

INGREDIENTS

  • 225 g or 8 oz self-raising flour
  • pinch salt
  • 100 g or 4 oz shredded suet
  • 8 x 15 ml 8 tbsp cold water
  • 150 g or 6 oz butter
  • 150 g or 6 oz light soft brown sugar
  • 150 g or  6. oz currants
  • I thin-skinned lemon 

Microwave Sussex Pond Pudding Method:

Lightly grease the inside of the basin. Mix flour and salt in a bowl. Add the suet and enough cold water to make a firm dough. On a lightly floured surface roll out and use to line the prepared basin. of the dough.
 
In a mixing bowl, cream the butter and sugar until light and fluffy. Stir in the currants.
Spoon half of the currant mixture into the basin.With a skewer prick all over the surface of the lemon and press into the currant mixture.

Spoon over the remaining currant mixture. Form the lid by rolling out the remaining pastry. Dampen the edges with water and place on top of the pudding. Seal the edges well. 

Cook on HIGH for 8-10 minutes. To serve unmold into a serving dish and serve immediately. The pudding may collapse as it contains a lot of juice.

Serves 4

Cooking time: 8-10 mins.
