INGREDIENTS
- 100g or 4oz soft margarine
- 225g or 8oz self-raising flour
- 100 g or 4oz soft brown sugar
- 2 eggs
- 1 x 15 ml or 1 tbsp golden syrup
- 2 x 15 ml or 2 tbsp milk
- 150 g or 6oz sultanas or mixed fruit
Microwave Rub - In Fruit Cake Method:
Line the base of an 18
cm ( 7 " ) souffle dish with a circle of greaseproof paper. Put margarine and flour
into a bowl and rub in until the mixture resembles fine breadcrumbs.
Mix in sugar and
sultanas.
Beat eggs, syrup, and milk together in a jug. Make a well in the
center of the dry ingredients and add liquid. Mix well together. Put the mixture into a
prepared dish. Cook on MEDIUM power
for 5-6 mins.
Turn out onto a wire
rack to cool. Decorate with glacé
cherries, whole nuts, etc., and glaze with warmed apricot jam.
Makes 8-10 slices
