Microwave Lentil Moussaka Recipe

INGREDIENTS

  • 50 g or 2 oz Margarine
  • 2 onions, finely chopped
  • 2 cloves garlic, crushed
  • 100 g or 4 oz lentils
  • 1x 15 ml or 2 tbsp tomato purée
  • 300 ml or ½ / 2 pl stock
  • I large aubergine, sliced 

Microwave Lentil Moussaka Method:

Put margarine, onions, and garlic into a bowl and cook on HIGH for 3 minutes. Add the lentils, tomato purée, and stock and cook on LOW for 20 minutes. Leave the mixture to stand until cold. In a suitable container, layer the aubergine and lentil mixture  Cover with cling film, and cook on HIGH for 7-9 minutes.

 Power: HIGH - LOW

Serves 4

Cooking time: 30 mins.

Dish : 3 liters ( 6pt ) casserole
