INGREDIENTS
- 4 x 150 g or 2 x 6 oz baking
potatoes
Microwave Jacket Potatoes Method:
Wash and dry the potatoes.
Prick the skins with a fork.
Wrap in kitchen paper and cook either by power and time or
on the auto sensor
Note: Use even-sized potatoes. Always leave to stand for at least 5 minutes, wrapped in foil, shiny side in. NEVER COOK jacket potatoes wrapped in tin foil. Only wrap in tin foil for standing time after cooking is completed.
To calculate cooking times :
- 1 x 150 g ( 6 oz ) potato HIGH power for 5-6 minutes
- 2 x 150 g ( 6 oz ) potatoes HIGH power for 7-9 minutes
- 4 x 150 g ( 6 oz ) potatoes HIGH power for 11-13 minutes
When the potatoes are cooked try one of these tasty
fillings :
Cheese and Chives
Scoop out the potato from their
shells and mash them with butter, grated cheese, salt and pepper, and fresh chopped
chives. Pile back into the skins and reheat
on HIGH for 30-60 seconds per potato.
Bacon and Egg Potato Boats
While the potatoes are standing cook a rasher of bacon per
potato, on a rack covered with kitchen paper for I minute per rasher on HIGH (
it should be very crispy ). Cut the top of the potato and scoop out the center. Mash the potato with butter, salt, and pepper.
Crumble in
the bacon. Spoon the potato back into the shells, making a hollow in the
center.
In to hollow break an egg. Pierce the yolk once and the
white several time with a cocktail stick. Replace the potato lids and heat the potatoes on MEDIUM for 1½ MINS FOR I POTATO. 2-22 MINS FOR 2 POTATOES. 3-4 MINS FOR 4 POTATOES. Check during heating, as the time will vary depending on
the size of the eggs. The eggs should be set.
VARIATION:
Substitute a small tin of drained tuna or pink salmon for the bacon.
Surprise Potatoes
This is ideal for using up any leftover meat or vegetables. Scoop out the potato from the shells and mash it with butter,
salt, pepper, and grated cheese.
For a vegetable filling: Make 125 ml ( 1/4
pt ) cheese sauce. Add any finely diced cooked vegetables. Adjust seasoning
and spoon a little into the base of each shell.
Top with the mashed potato and reheat.
For a meat filling: Finely chop the leftover meat and mix
with 2-3 x 15 ml ( 1 tbsp ) of chutney. Spoon into the base of the shells, top with potato, and
reheat.
