INGREDIENTS
- 2 large onions
- 2 fresh green chilies
- 2 garlic cloves
- 225 g or 8 oz bacon slices
- 150 g or 6 oz long-grain rice
- 1 x 396 g or 14 oz can of tomatoes
- salt
- 450 ml or 3/4 pt chicken stock
- 450 g or 1 lb shelled shrimp
- 2 x 15 ml or 2 tbsp chopped parsley
- 2 x 15 ml or 2 tbsp grated parmesan cheese
Microwave Shrimp Pilaf Method:
Peel and finely slice the onions. Seed and finely chop the chilies. Peel and crush the garlic. Chop bacon. Put the onions, chilies, garlic, and bacon into a 2 liter ( 4 pt ) casserole dish and cook on HIGH for 5 minutes, stirring once. Stir in the rice, tomatoes with their juice, salt, and chicken stock.
Cover the dish and cook on MEDIUM for 12-15 minutes. Stir in the shrimp, and cook on HIGH for a further 5 minutes. Stand for 5 minutes then sprinkle with parsley and cheese and serve immediately.
