Microwave Roast Lamb with Crackling

INGREDIENTS

  • 1 joint of Lamb
  • salt
  • oil

Microwave Roast Lamb with Crackling Method:

Weigh the piece of Lamb. Using a very sharp knife, remove the crackling in one sheet. Score the crackling. Brush the crackling only with oil and sprinkle liberally with salt. Shake off any surplus salt.

Drape the crackling over the meat. Place the meat on a low rack in a shallow dish. Select MEDIUM power and set the calculated time, or cook on Autoweight.To cook by Autosensor, cover with cling film and cook on Auto. At the end of cooking remove the crackling. Wrap the meat in foil, shiny side in, and leave to stand for 15-20 minutes.

Place the crackling on a clean rack and cover it with a piece of kitchen paper. Cook on HIGH for 3-5 minutes until well " crackled ".Cool slightly before breaking up. The crackling will become crisper as it cools.
